Wood slats wrap the spiral staircase and restaurant at this design hotel in Strasbourg. Patrick Jouin and Sanjit Manku transformed the eighteenth-century building into Hotel Les Haras, which opened with 55 rooms and a restaurant. The interiors balance authenticity with a modern sense of luxury and comfort, drawing inspiration from the site’s equestrian past. Curved oak elements connect the restaurant’s two floors and create a sculptural support structure, while a rounded bar and open kitchen anchor the ground floor. Casual chairs and dining tables keep the atmosphere relaxed.

The hotel concept draws on the world of horses

On the second floor, guests sit beneath original beams and columns, surrounded by a more intimate setting. Accent chairs in saddle leather add color and character, while long tables accommodate larger gatherings. The stone window surrounds are left visible, and the guest rooms are pared back, with white tones, leather details, and warm timber. The thoughtful hotel also highlights the design of its timber structures. In the lobby, horse graphics catch the eye and quietly recall the building’s original purpose.
